The defect warranty covers manufacturing faults under normal kitchen use. Hand wash, never the dishwasher. Wash the blade by hand with warm water and a little soap, then dry it straight away with a soft cloth. The dishwasher dulls the edge and damages the handle.

Cut on wood or plastic. Use a wooden or plastic board. Glass, stone, granite, and ceramic will chip a fine edge.

Hone often, sharpen rarely. A few passes on a honing rod every week or two keeps the edge true. When it finally needs sharpening, a whetstone restores it, or send it to us for free sharpening.

Store it safely. Keep the knife on a magnetic strip, in a saya, or in a block, not loose in a drawer where the edge can knock against other tools.

Keep it dry. Never leave the knife to soak or sit wet in the sink. A drop of food-safe oil before long storage protects both the steel and the Damascus pattern.

Every MASAHIRA blade is made in Seki, the city in Gifu that has forged Japan's blades for seven hundred years, from samurai swords to the knife in your kitchen. Each one carries the seal of the Masahira forge, founded in 1924 and now in its third generation under master bladesmith Toshiro Masahira, a certified Traditional Craftsman. For the first time in a hundred years he is releasing his blades directly from the forge, with no gallery and no dealer in between.

Real. The pattern is not printed or etched on. It is 67 actual layers of steel, folded and forge-welded around a hardened VG-10 cutting core, then hand-finished in Seki so the flowing suminagashi grain runs all the way through the blade. No two are identical, because the pattern is in the steel itself.

Razor sharp and ready to cook. Each blade is hand-honed to a 12 to 15 degree edge before it leaves Seki, far finer than a typical Western knife, so it glides through tomatoes, fish and herbs from the very first cut. No breaking in, no setup.

It holds. The VG-10 core is hardened to 60 to 62 HRC, harder than the soft stainless used in most store-bought knives, which is why it keeps its edge for months of regular use rather than weeks. A few passes on a honing rod keeps it aligned between sharpenings.
